- 1/2 cup enchilâdâ sâuce
- 1/4 tsp sâlt
- 1/4 teâspoon chili powder
- 1/8 teâspoon ground cumin
- 1 cup blâck beâns
- 1 cup corn
- 1.5 cups shredded cheese3/4 mixed in
- Serve with âvocâdo sâlsâ ând/or sour creâm
- Heât oven to 400°F.
- Scrub the sweet potâtoes ând pât to dry. Using â fork, poke holes in the sweet potâto ând ârrânge on â bâking sheet.
