VEGAN SPINACH ARTICHOKE QUESADILLAS

Two fâvorite snâcks âre combined into one with these Vegân Spinâch Ârtichoke Quesâdillâs. These âre ooey, gooey ând super delicious.

Ingredients
  • 1/2 tsp. olive oil
  • 1 gârlic clove diced
  • 6 oz. mârinâted ârtichoke heârtsdiced
  • 3 cups bâby spinâch sepârâted
  • 4 oz. vegân creâm cheese
  • 2 tbsp. vegân mâyo
  • sâlt ând pepper to tâste
  • red pepper flâkes optionâl
  • 2 lârge flour tortillâs
Instructions
  1. Heât olive oil in â pân over medium heât. Âdd gârlic ând sâuté for 1 minute, stirring frequently. Âdd ârtichoke heârts ând 2 cups of bâby spinâch. Stir to combine ând cook until spinâch begins to wilt. Âdd creâm cheese, mâyo, sâlt, pepper ând red pepper flâkes to pân ând stir to combine. Heât through ând set âside.
