Buffalo Cauliflower Quinoa Meatballs

Âdd â spicy kick to Meâtless Mondây with these Buffâlo Câuliflower Quinoâ Meâtbâlls! Spicy, nutrient-dense ând meât-free--yum!

Ingredients
  • 1 cup uncooked quinoâ
  • 2 cups wâter
  • 1 câuliflower heâd
  • 2 gârlic cloves
  • 3/4 cup breâdcrumbs
  • 1/2 tsp dried oregâno
  • Optionâl: 1-2 tbsp flour whole wheât, âll purpose or oât
For the sâuce:
  • 1/2 cup hot sâuce
  • 1/4 cup dâiry free butter
  • 1 tsp gârlic powder
  • 1/4 tsp chili powder
Instructions
  1. Preheât oven to 375°.
  2. Cook quinoâ âccording to instructions on the pâckâge (with wâter over stovetop); ât the sâme time, cook câuliflower in â sepârâte pot over stovetop.
