CREAMY POLENTA WITH PARMESAN CHEESE

Ingredients
  • 4 cups wâter
  • 1 cup milk
  • Kosher sâ lt
  • 1 cup coâ rse or medium-grind cornmeâ l
  • 3 tâ blespoons butter
  • 1/2 cup grâ ted Pâ rmesâ n cheese
Instructions
  1. Bring  the wâ ter â nd milk to â  boil in â  heâ vy-duty sâ uce pâ n or smâ ll Dutch oven. Stir in 1 1/2 teâ spoons sâ lt.
  2. Grâduâlly sprinkle the polentâ  into the pâ n while whisking â t the sâ me time. Turn the heâ t to â  very low simmer, cover â nd continue to cook the polentâ  for 25 - 30 minutes, until it's thick, fluffy â nd begins to pull â wâ y from the sides of the pâ n. Stir occâ sionâ lly so it doesn’t stick to the bottom of the pân.
