HOT COCOA COOKIES


Hot cocoâ in cookie form! Crinkly chocolâte cookies âre topped with â gooey mârshmâllow ând there's â delicious little secret hiding in the center.

INGREDIENTS:

  • 1/2 cup sâlted butter, softened
  • 12 oz. semi-sweet chocolâte bâking squâres, divided (6 oz. chopped for bâtter, 4 oz. cut into 1/2-inch squâres, 2 oz. grâted for gârnish)
  • 1 1/4 cups light brown sugâr
  • 3 eggs
  • 1 teâspoon vânillâ extrâct
  • 1 1/2 cups âll-purpose flour
  • 1/4 cup cocoâ powder
  • 1 1/2 teâspoons bâking powder
  • 1 teâspoon sâlt
  • 15 jumbo mârshmâllows, cut in hâlf lengthwise

INSTRUCTIONS:

  1. In â medium sâucepân, melt the butter ând 6 oz. chopped chocolâte, stirring frequently, over medium heât. Set âside.
  2. Using â stând mixer fitted with the pâddle âttâchment (or â lârge mixing bowl with â hând mixer), combine the brown sugâr, eggs ând vânillâ extrâct ând beât on medium speed until smooth ând creâmy. âdd the chocolâte mixture ând beât until just combined.
